🠴 烏醋 🠶

烏醋,又稱黑醋、陳醋或香醋,為以糯米、麥麩、黃豆、酒麴等原料釀造而成的發酵調味品。色澤深黑、質地濃稠、味酸中帶甘、香氣厚重。依產地與製法不同,常見種類有山西老陳醋、鎮江香醋、福建烏醋、台灣烏醋等。

山西老陳醋以酸味濃烈、釀期久遠著稱;
鎮江香醋香氣醇和、酸甜平衡;
福建與台灣烏醋則多添焦糖或中藥材,風味甘潤圓滑。

中醫理論認為,烏醋性溫,味酸甘,歸肝、胃經。其功效為行氣活血、開胃消食、解毒止痛、收斂生肌。酸入肝能舒肝理氣、散瘀止痛;甘入脾胃可調中助運、增進食慾。適量食用能促進消化、化積滯、助氣血流通;外用可消腫解癰、止癢生肌。

烏醋應用廣泛,常用於酸辣湯、滷味、紅燒、魚肉料理、餛飩、涼拌菜等,可去腥提香、調和五味,使菜餚色澤紅亮、味道鮮潤。另可與薑同煮作暖胃飲,或入藥膳以引諸藥入肝經。
