🠴 Gin 🠶

琴酒(Gin)為一種以穀物(多為大麥、玉米或黑麥)蒸餾後,再以杜松子(Juniper berry)與多種香料植物(如芫荽籽、當歸根、橙皮、肉桂等)浸釀提香的烈酒。其風味清香辛冽,帶有草本與柑橘香氣,為調酒中最常用的基酒之一,如琴通寧(Gin Tonic)與馬丁尼(Martini)皆以其為主角。

中醫角度認為,琴酒性溫,味辛、苦,歸心、肝、胃經。具有行氣活血、祛寒散滯、促進循環、開胃助消化之效。適量飲用可暖胃、解鬱、舒筋活絡,並能助陽氣流通。其中杜松子具利尿解毒、健脾理氣之功,可改善水腫與消化不良。但過量則易耗氣傷陰、擾心動火,宜節制飲用。

依製法與風格不同,可分為倫敦乾琴酒(London Dry Gin)、老湯姆琴酒(Old Tom Gin)與新式風味琴酒(New Western Gin)等。琴酒常用於調製雞尾酒,如經典的琴湯尼(Gin & Tonic)、馬丁尼(Martini)與內格羅尼(Negroni)。其清爽芳香與多變風味,使琴酒成為全球最具代表性的蒸餾酒之一,象徵優雅與創意的調酒文化。
