🠴 Goose egg 🠶

學名:Anser anser domesticus 別稱:鵝卵、鵝鴨蛋。為家鵝所產之卵,體型較鴨蛋、雞蛋為大,蛋殼厚實,色澤多為白色或淡灰白。因產量較少,常被視為滋補珍品。

常見種類:依品種可分為白鵝蛋、灰鵝蛋、雜交鵝蛋等;另可依用途區分為鮮食鵝蛋、鹹鵝蛋兩類。鮮蛋多用於煎煮料理,鹹鵝蛋則以鹽漬熟成,風味濃郁。

性味歸經:性平微涼,味甘,歸肺、脾、腎經。

功效:有滋陰養血、潤肺止咳、補虛安胎、清熱利咽之功。古籍《本草綱目》記載鵝蛋可「補中益氣、養陰潤燥」,適合氣血虛弱或久咳之人。蛋白質與脂肪含量高,能補充能量;蛋黃富含卵磷脂,有助滋養腦神經。

應用:可煮、蒸、煎、烤食用,亦可製成鹹鵝蛋、鵝蛋酥、蛋花湯等。因其味濃香厚,常搭配青菜或豆腐中和油膩。鵝蛋亦入藥膳,用於氣陰兩虛、喉中不利等症狀調理。
