胡椒(學名 Piper nigrum L.)為胡椒科胡椒屬藤本植物成熟果實。別稱黑胡椒、白胡椒、長胡椒、胡椒子。常見種類包括黑胡椒(未成熟果實乾燥)、白胡椒(成熟果實去皮乾燥)、綠胡椒(新鮮或醃制果實),以黑胡椒顆粒飽滿、香氣濃郁者為佳。果實球形或橢圓形,黑褐色或灰黑色,味辛辣芳香。

性味歸經:性溫,味辛,入脾、胃、腎經。

功效與應用:胡椒具有溫中散寒、行氣止痛、驅寒解表、消食化滯之功。主治脾胃虛寒、腹痛、嘔吐、寒濕痹痛及寒邪感冒。常用於溫中散寒方,如配乾薑、肉桂、丁香;治腹痛脹氣可與砂仁、川楝子同用;治感冒寒邪可與生薑、桂枝搭配。胡椒可研粉入丸散或煎服,也可入膳食,如胡椒炒菜、胡椒湯,用於暖胃驅寒、增進食欲,兼具食療與藥用功能。
