麥芽(學名 Hordeum vulgare L. 或 Triticum aestivum L. 發芽後之乾燥幼苗)為禾本科植物大麥或小麥萌芽後製成之乾燥穀芽。別稱谷芽、穀芽、麥芽米。常見種類包括大麥芽、小麥芽與裸麥芽,以粒大飽滿、芽長均勻、色淡黃至黃褐者為佳。

性味歸經:性平,味甘,入脾、胃經。

功效與應用:麥芽具有消食健胃、化積行氣、疏肝利膽之功。主治食積不化、脘腹脹滿、消化不良、乳積停滯及肝膽氣滯。常用於消食健脾方,如配神麴、山楂、砂仁;治乳積停滯可與蒲公英、雞內金同用;疏肝理氣則可搭柴胡、香附。麥芽多以炒製或煎煮入丸、散、湯劑,也常入食療,如麥芽糖、麥芽餅或與粥、湯同用,既健脾消食又改善乳汁分泌。
