烏骨雞(學名:Gallus gallus domesticus var. domesticus),又稱絲羽烏骨雞、黑骨雞、藥雞,為家雞的一種特殊品系,全身羽毛、皮膚、骨骼皆呈黑色。其肉質細嫩、脂肪少、膠質豐富,自古即被視為補血養身、強體延年之珍禽,常用於藥膳燉湯與滋補料理中。

中醫認為,烏骨雞性平,味甘,歸肝、腎、脾經。具有補肝益腎、養血調經、健脾養陰、退虛熱之功效。主治氣血兩虛、月經不調、產後虛弱、盜汗、頭暈眼花等症。尤適合女性體虛、久病體弱或術後調養之人食用。其性質溫潤而不燥,能補而不膩,為滋陰補血佳品。

現代營養學指出,烏骨雞富含高品質蛋白質、胺基酸、膠原蛋白、鐵、鋅、維生素B群與黑色素。具有增強免疫力、促進血液循環、抗氧化與延緩老化的作用。其脂肪含量低而營養密度高,是兼顧養生與健康的優質肉品。
