🠴 毛豆 🠶

毛豆,又稱青豆、菜用大豆、鮮食大豆,為豆科植物大豆(Glycine max L.)的未成熟豆莢。依品種與用途可分為青仁型、黃仁型、黑仁型等,常見食用品種如台南5號、台南11號、屏東1號等。毛豆在台灣廣泛栽培,主要供鮮食、冷凍加工及出口。

毛豆性平,味甘,歸脾、胃、大腸經。具健脾益氣、和中除濕、養血生津、清熱解毒之效。中醫認為其可補虛弱、安神益智、潤膚養顏,亦能幫助消化、緩解酒醉。因含植物性蛋白與膳食纖維,常被視為補充能量與養身的良品。

應用方面,毛豆可水煮、清炒、紅燒或入湯,也是下酒菜與便當配菜的常見食材。其風味香濃、口感綿實,常以鹽水煮製、撒上胡椒食用。亦可作為沙拉、壽司或素食料理中的蛋白質來源。加工後可製成毛豆仁罐頭、冷凍毛豆、毛豆醬等多樣產品,為兼具營養與風味的常見豆類蔬菜。
