馬鈴薯(學名 Solanum tuberosum L.),為茄科茄屬多年生草本植物,原產南美洲高原地區。別稱有洋芋、土豆、山藥蛋、薯仔等。其塊莖膨大為主要食用部位,富含澱粉,是全球性主食之一。常見種類依外皮與肉色可分為白皮馬鈴薯、黃皮馬鈴薯、紅皮馬鈴薯等,其中台灣主要栽培於雲林、嘉義及高冷山區。

性味歸經:性平,味甘,歸脾、胃、大腸經。

功效方面,馬鈴薯具補氣健脾、和胃調中、解毒消炎、潤腸通便之效。《本草綱目拾遺》載其「和中益氣,厚腸胃」。能調理胃酸過多、口乾便秘及虛弱體質,亦有助於促進消化與穩定血壓。

應用上,馬鈴薯可煮、蒸、炸、烤、燉湯,亦可製成薯條、薯泥、薯片等食品,為中西料理常見食材。除直接食用外,其澱粉可作為食品增稠劑與工業原料。嫩芽及綠皮部分含龍葵鹼,有毒不可食。
