🠴 Udon Noodles 🠶

烏龍麵(日語:うどん,Udon)是日本傳統的麵食之一,以其粗而富彈性的麵條著稱。主要原料為小麥粉、鹽與水,經過反覆揉壓、靜置與切製成圓粗或扁寬的麵條。烏龍麵質地滑順、口感Q彈,能吸附湯汁與醬料,冷熱皆宜。

其名稱「烏龍」並非指茶,而源於古漢語「混沌」之意,形容麵條厚實渾圓的外形。烏龍麵依地區風味差異可分為多種,如香川縣的「讚岐烏龍麵」以彈牙著稱、秋田的「稻庭烏龍麵」則細緻柔滑。常見吃法包括熱湯烏龍、冷沾麵(ざるうどん)、咖哩烏龍與鍋燒烏龍等。

湯底多以昆布、柴魚、醬油調製,配料可加蔥花、天婦羅、溫泉蛋或牛肉。烏龍麵營養均衡,含有豐富碳水化合物與植物性蛋白質,是日本家庭餐桌與食堂中極為普遍的主食之一,也深受亞洲各地食客喜愛。
