小白菜(學名 Brassica rapa var. chinensis),別稱,為十字花科一年生草本蔬菜,葉柄肥厚、葉色翠綠,質地柔嫩。常見種類有青梗小白菜、白梗小白菜、矮腳小白菜、娃娃菜型小白菜等,依生長地區與品系而風味略異。

性味歸經:小白菜性涼,味甘,入脾、胃、大腸經。中醫認為其具清熱除煩、利尿通便、潤肺止咳、養胃生津之功效。《本草綱目拾遺》記載其「清胃熱、利二便、和中益氣」,適合熱盛體質與便秘者食用。

功效方面,小白菜含有維生素A、C、鈣、鐵、葉綠素與膳食纖維,能強健骨骼、護眼明目、增強免疫、促進腸道蠕動,屬於高營養低熱量的綠葉蔬菜。

應用上,小白菜可用於清炒、燙湯、火鍋、蒸餃餡料等料理,口感鮮嫩,能吸附湯汁,常與豆腐、菇類、魚片搭配。亦可涼拌或煮粥食用,是台灣家庭常見的家常蔬菜之一。
