黃地瓜(學名 Ipomoea batatas (L.) Lam.),別稱甘藷、番薯、黃心地瓜,屬旋花科番薯屬多年生藤本植物。其塊根外皮呈黃褐色或橙色,肉質柔軟香甜,是台灣常見食用地瓜品種之一。依品系可分為台農57號、台農66號、台農73號等,廣泛栽培於中南部丘陵與沿海地區。

性味歸經:性平,味甘,入脾、腎經。

功效方面,黃地瓜具補中益氣、健脾養胃、益腎氣、潤腸通便之效。《本草綱目拾遺》載其「補虛和血,益氣生津」。其黃色肉質富含β-胡蘿蔔素、膳食纖維、維生素C與鉀,能明目養肝、促進代謝、增強免疫力,並有助於維護腸道健康與排毒。

應用上,黃地瓜可蒸、烤、煮、炸、入湯,亦常製成地瓜球、地瓜片、甜湯、地瓜粥等,風味香甜可口。亦可加工成粉末或乾片,用於製餅、飲品與健康食品中,是兼具營養與食療價值的根莖作物。
