🠴 雞心 🠶

學名:Gallus gallus domesticus(心臟)別稱:雞仔心、雞肝心、雞心臟,為家雞的心臟器官,屬於雉科(Phasianidae)雞屬(Gallus)。外形呈倒梨形,質地緊實,富含血管與肌纖維,是營養價值極高的禽類內臟之一。

常見種類:依來源不同,可分為白肉雞心、放山雞心、烏骨雞心等。放山雞心風味濃郁、口感彈韌,適合滷製或燒烤;白肉雞心則質地較嫩。

性味歸經:性平,味甘、微苦,歸心、脾經。

功效:有養心安神、補血益氣、健脾養胃之效。《本草綱目》載其「補中益氣,養心安神」,古方中常與龍眼肉、蓮子共用以養心氣虛弱。雞心含豐富蛋白質、鐵質與維生素B群,能改善氣血不足與疲倦。

應用:雞心常用於滷、炒、燙、烤、煮湯等料理。台式滷味、日式串燒中皆常見,亦可搭配薑蒜快炒或紅燒調味。口感軟中帶韌、風味獨特,為常見的高蛋白補氣食材,適合體虛者及勞動後補養食用。
