菠菜(學名 Spinacia oleracea L.),別稱波斯菜、赤根菜、菠薐菜、飛龍菜,為藜科(Amaranthaceae)一年生草本植物。原產西亞波斯一帶,後傳入中國,現為世界常見綠葉蔬菜。依葉形與生長季節可分為尖葉種、圓葉種、冬菠菜與春菠菜等類型,葉片柔嫩、色澤翠綠。

性味歸經:性涼,味甘,入胃、大腸經。

功效方面,菠菜有潤燥養肝、養血止血、清熱解毒、通腸利便之效。《本草綱目》記載其「潤腸胃、益血脈、止渴除熱」,能補益氣血、養陰潤燥,適用於貧血、便秘及口乾舌燥等症。其含豐富鐵質與葉酸,可助造血、強健體力。

應用上,菠菜可汆燙、清炒、涼拌或入湯,與豆腐、雞蛋、菇類、芝麻等搭配最為常見。亦可作為餃子餡、蔥餅餡料。在中藥食療中,常配合芝麻、蜂蜜或豬肝同食,用以補血養肝,潤腸通便。
