🠴 Salted duck eggs 🠶

學名:Anas platyrhynchos domesticus(鹹鴨蛋)別稱:鹽鴨蛋、咸鴨子蛋、鹽蛋。為以鴨蛋經鹽漬熟成之傳統加工食品,在華人飲食文化中歷史悠久。

常見種類:依製法可分為濕鹽漬法、乾鹽漬法、酒漬法等;依熟成程度分為生鹽蛋、熟鹽蛋。以高郵鹹鴨蛋最具代表,蛋黃呈金紅油潤、質地細沙。

性味歸經:性平,味鹹,歸心、脾、腎經。

功效:具滋陰潤燥、養血安神、清熱解毒、補中益氣之效。鴨蛋本性偏寒,鹽漬後含有豐富的蛋白質、脂肪、鈣、磷、鐵及維生素A、D、E,可潤膚養顏、益腎健腦。其蛋黃中卵磷脂含量高,有助改善血脂與保護視力;但因鈉含量偏高,不宜過量食用。

應用:鹹鴨蛋常搭配白粥、炒菜、粽子、月餅、糕餅餡料等,蛋黃可製成金沙料理、鹹蛋黃南瓜、金沙豆腐等。其蛋黃色澤金紅、香氣濃郁,是中式菜餚與節慶食品中不可或缺的傳統美味。
