學名:Anas platyrhynchos domesticus(皮蛋)別稱:松花蛋、變蛋、灰包蛋、百年蛋。為以鴨蛋為主經石灰、鹼及鹽類等物質加工熟成的傳統發酵食品。

常見種類:依外觀與製法可分為松花皮蛋、無鉛皮蛋、酒香皮蛋、碱水皮蛋等;松花皮蛋因蛋白中結晶形成松枝紋而最具代表性。現代多採無鉛配方製作,以確保食品安全。

性味歸經:性涼,味辛、鹹,歸肝、胃經。

功效:具清熱去火、醒胃消食、明目降壓之效。皮蛋含有蛋白質、氨基酸及微量元素,經鹼化後部分蛋白質分解為易吸收的小分子物質,能促進消化、增進食慾。傳統認為能清熱解煩、止渴醒酒;但因鹼性較強,不宜空腹或過量食用,以免刺激胃黏膜。

應用:常見於皮蛋豆腐、皮蛋瘦肉粥、涼拌皮蛋等料理,也可搭配豆腐乳、醬油、香油食用。其蛋白晶瑩剔透、蛋黃滑嫩香濃,是中式餐桌上兼具風味與文化特色的食材。
