🠴 Mullet roe 🠶

學名:Mugil cephalus 別稱:烏魚卵、烏魚卵乾、黑鯔子。為烏魚(黑鯔魚)之成熟卵巢經鹽漬、壓乾而成,呈橘紅色或金黃色,質地緊實,味道濃郁,是臺灣與東亞沿海地區著名的高級魚卵製品。

常見種類:依加工方式可分為日曬烏魚子、冷風烏魚子、炙烏魚子等;依魚源又有野生烏魚子與養殖烏魚子之別,其中日曬型風味最濃、最具傳統特色。

性味歸經:性溫,味甘鹹,歸腎、脾經。

功效:具補腎益精、養血潤燥、健脾益氣之效。《本草綱目拾遺》記載:「魚子,補虛損,益精血。」傳統醫理認為,烏魚子可補腎填精、潤燥養顏,對氣血不足、體倦乏力者有助。

應用:烏魚子為宴席與年節佳餚,可乾煎、炙烤、切片佐蒜苗或白蘿蔔片,亦常與高粱酒同食以增香。中醫藥膳中,烏魚子可入粥或蒸蛋中食用,補而不膩。台灣、福建、澎湖等地均視之為象徵富貴吉祥的名產。
