🠴 旗魚 🠶

學名:Istiophorus platypterus 別稱:又稱馬林魚、劍旗魚、海中飛魚王等,為大型洄游性魚類,因背鰭巨大如旗而得名。

常見種類:主要食用種為印度洋旗魚與太平洋旗魚,外形修長、體表具銀藍色光澤。與劍魚(Xiphias gladius)相似,但旗魚背鰭高長且可收摺。

性味歸經:性平,味甘、鮮;歸脾、胃、腎經。

功效:具有補氣養血、健脾開胃、強筋壯骨之效。魚肉含豐富優質蛋白質、DHA與EPA,有助促進腦部發育與維護心血管健康。中醫認為其能補虛益氣、潤燥養顏,適合體弱者與產後調養食用。

應用:旗魚肉質緊實、纖維細密,是生魚片、煎烤、紅燒、魚排、火鍋的常用食材。台灣常見料理如「旗魚黑輪」、「旗魚丸」、「旗魚鬆」皆以其肉製成。其風味清鮮不腥、油脂適中,是南北海鮮料理中兼具營養與美味的重要魚種。
