學名:Siniperca chuatsi 別稱:桂花魚、花鱸、鱖魚、鱖子魚、國魚、鱖花魚,屬於鱸形目(Perciformes)鱸科(Percichthyidae)鱖屬(Siniperca)。此魚為淡水肉食性魚類,原產於中國長江流域及台灣部分水域,體形側扁略長,背部青褐具黑斑,肉質潔白細嫩,少刺而富彈性,為極受歡迎的高級食用魚。

常見種類:主要包括**真鱖(S. chuatsi)與松江鱖(S. kneri)**兩類,前者體大肉厚,經濟價值較高;後者體型略小,常見於南方湖泊與水庫。

性味歸經:性平,味甘、微溫,歸脾、胃經。

功效:有補虛養血、健脾益氣、強身滋養之效。《本草綱目》記載鱖魚“益氣力,暖胃生津”,適合體虛勞損、產後或病後調養者食用。

應用:肉質鮮嫩細膩,常用於清蒸、紅燒、煮湯、油煎等料理;清蒸鱖魚尤能保留原味與鮮香。亦為宴席常見名菜之一。魚頭、魚骨可熬湯補氣,魚皮膠質豐富,能潤膚養顏。
