學名:Epinephelus spp.
別稱:石斑、石斑仔、班仔魚、花尾、虎斑,屬於鱸形目(Perciformes)鱸亞目、石斑魚科(Serranidae)。石斑魚種類繁多,體型壯實、嘴大、性兇猛,棲息於熱帶與亞熱帶珊瑚礁或岩礁海域。台灣沿海盛產多種石斑,是重要的經濟養殖魚類之一。

常見種類:龍膽石斑(Epinephelus lanceolatus)、青斑(E. awoara)、花尾(E. fuscoguttatus)、點帶石斑(E. coioides)、紅斑(Cephalopholis miniata)等。

性味歸經:性平,味甘,歸脾、胃經。

功效:有補氣健脾、養血生肌、益精填髓之功,能強壯體魄、增進食慾,對體虛、貧血、術後或病後恢復者有益。其肉質細膩、脂肪含量低而蛋白質豐富,為滋補佳品。

應用:石斑魚肉可清蒸、煮湯、紅燒或火鍋,以保持鮮美風味。台灣養殖業常見「龍虎斑」與「青斑」等混種,廣受市場歡迎。其魚骨可熬湯補虛,魚皮富含膠質,常用於美容與滋補料理。
