芝麻醬,又稱麻醬、胡麻醬、香麻醬,是以白芝麻或黑芝麻炒熟後研磨成的濃稠糊狀調味品,香氣濃郁、質地滑潤。依原料不同,常見種類有白芝麻醬與黑芝麻醬兩種。白芝麻醬香氣清雅、口感細膩,常用於涼拌與沾醬;黑芝麻醬色澤深、味道濃厚,富含油脂與礦物質,多用於甜點與滋補食品中。

中醫認為,芝麻醬性平偏溫,味甘,歸肝、腎、大腸經。其功效有滋補肝腎、潤腸通便、養血生髮、潤燥養顏。因芝麻含有豐富油脂與蛋白質,能潤燥補虛,適用於便秘、頭髮早白、體虛血少等情況。

在應用上,芝麻醬廣泛運用於料理與養生。食用方面,可作為涼麵、火鍋沾醬、拌菜、製餅、甜湯之主要調味料,能增添濃郁香氣與滑順口感。藥膳上可入粥或與蜂蜜調服,以養肝腎、潤膚養髮。芝麻醬亦可搭配中藥材製成滋補膏方,常見於秋冬潤燥養生食譜之中。
