🠴 Margarine 🠶

乳瑪琳(學名以其原料植物油為主,通常由多種植物油調合,無固定學名),別稱人造奶油、Margarine、植物奶油。以植物油(大豆油、棕櫚油、葵花油等)經氫化或酯交換技術固化,再加入水、乳化劑、食鹽、天然或奶香風味製成。外觀多為淡黃或乳黃色,質地可從軟質可塗抹型到硬質烘焙型。常見種類包含軟質抹醬型乳瑪琳、硬質烘焙用乳瑪琳、無鹽乳瑪琳、有鹽乳瑪琳、無反式脂肪配方、植物基烘焙油脂及高穩定度商用烘焙脂類等。

性味歸經:味甘,性平偏潤,入脾、肺經。質地柔潤、滋膩,具補虛、潤燥之性。因其為加工植物油脂,無明顯藥性偏向,偏屬滋潤養陰、補益氣血之弱性,適合乾燥體質與需補充能量者,但需避免過量。

功效方面,乳瑪琳提供能量、脂溶性維生素A與E(依配方添加),可潤燥、補充熱量、協助脂溶營養吸收。若為無反式脂肪與高油酸配方,對心血管較友善;但傳統氫化型可能含反式脂肪,長期大量攝取不利血脂。

應用上,乳瑪琳廣泛使用於烘焙、麵包、蛋糕、餅乾、酥皮、煎烤料理與抹醬用途。軟質型適合塗抹、簡易烹調;硬質型適合塑形、增添酥脆口感。植脂型耐高溫且穩定度高,為餐飲烘焙常用油脂之一。
