🠴 Duck Fat 🠶

鴨油(來源為家鴨 Anas platyrhynchos domesticus 的皮下與腹腔脂肪熬煉所得),又稱Duck Fat、鴨脂、鴨油脂。通常以鴨皮、尾脂或腹脂低溫慢煉,使油脂析出,成品呈淡金至金黃色,香氣濃郁,風味較雞油更厚實。常見種類包含傳統熬製鴨油、商用精製鴨油、冷藏固態鴨油、鴨油渣附帶款、法式Confit烹飪專用鴨油與調味型鴨油。

性味歸經:味甘、性溫,入脾、肺、腎經。鴨肉性涼,但其油脂煉出後偏溫潤,具滋陰補虛、潤燥生津、溫中和胃之性。適合體虛乏力、氣血不足、乾咳、腸燥者;但濕熱較重者應酌量食用。

功效方面,鴨油富含油酸、亞油酸與適量飽和脂肪,可提供高能量來源,有助調節脂質代謝、增強飽足感並協助脂溶維生素吸收。油質細滑且較耐熱,含天然抗氧化物質,對皮膚滋潤、修復黏膜與維持能量代謝皆有一定助益。其脂肪酸組成使其在烹調中呈現柔軟口感與濃郁肉香,適合增強菜餚風味。

應用上,鴨油為法式料理、台式滷味及中式家常菜的常用油脂。可用於煎、烤、炒、低溫油封(Confit)、製作鴨油炒飯、鴨油拌飯、鴨油蔥餅、烤馬鈴薯、煎洋芋、炒時蔬等。其耐熱度高且風味醇厚,少量即可增添層次。亦可用於取代奶油,提升鹹點香氣。
