🠴 Green Cabbage 🠶

綠甘藍(學名 Brassica oleracea var. capitata f. alba),別稱包心菜、圓白菜、結球甘藍、高麗菜,屬十字花科(Brassicaceae)芸薹屬二年生草本植物。原產於歐洲地中海地區,現為世界性重要蔬菜之一。臺灣常見種類包括春高麗、秋甘藍及耐熱型綠甘藍,依葉質與季節分為軟葉型與硬葉型。

性味歸經:性平,味甘,入脾、胃經。

功效方面,綠甘藍有健脾和胃、潤腸通便、消腫解毒、補中益氣之效。古籍記載其能「養胃生津,助消化」,適合體弱、食欲不振或腸胃虛寒者食用。亦被認為可舒緩口腔潰瘍與胃氣不和等症狀。

應用上,綠甘藍可清炒、涼拌、煮湯、燉肉或包餃餡,風味清甜爽脆。亦常製作泡菜或沙拉,保持其清香口感。嫩心部分質地細嫩,適合快速拌炒;外葉則可作湯料或燉煮。

常見品種包括:

圓球型甘藍:最常見,葉緊密、甜味高。
扁球型甘藍:葉片較鬆,適合炒或湯品。
皺葉甘藍(薩伏伊甘藍):葉柔軟、適合燉煮或包菜卷。
