空心菜(學名 Ipomoea aquatica Forsk.),別稱通心菜、藤藤菜、蕹菜、水蕹,屬旋花科(Convolvulaceae)番薯屬多年生蔓性草本植物。莖中空、節間長,可匍匐生長於濕地或水邊,是臺灣夏季常見蔬菜之一。依生長環境可分為水耕空心菜與旱地空心菜兩類,前者葉大莖粗,後者葉細味濃。

性味歸經:性寒,味甘,入肝、心、小腸經。具有清熱解毒、涼血止血、通便消腫之功。《本草綱目拾遺》載其「清暑熱,利腸胃,解毒腫」。

功效方面,空心菜含有維生素A、C、鐵、鈣及膳食纖維,可清熱降火、促進腸道蠕動、幫助排毒與維持眼部健康,尤適合夏日食用以消暑去熱。

應用上,常見於清炒、涼拌、煮湯或火鍋,與蒜蓉、豆豉、辣椒等搭配風味尤佳。葉嫩莖脆、色澤翠綠,是家常蔬菜與夜市熱炒中極具代表性的綠葉菜。
