🠴 虱目魚 🠶

學名:Chanos chanos 別稱:虱目魚、牛奶魚、國姓魚、海草魚,屬於虱目魚科(Chanidae)虱目魚屬(Chanos),是台灣沿海極具代表性的養殖魚類之一。體形延長略側扁,體色銀白,背部青灰帶綠光,魚鱗細密。虱目魚原產於印度洋至太平洋暖海區域,在台灣西南沿海如台南、嘉義一帶尤為常見,為台灣傳統民生魚種。

常見種類:主要為養殖虱目魚(Chanos chanos)一種,依飼養環境分為淡水虱目魚、半鹹水虱目魚、海水虱目魚。

性味歸經:性平,味甘,歸脾、胃、肝經。

功效:具補虛益氣、健脾養胃、滋陰潤燥、養血安神之效。《本草綱目拾遺》記載其肉「補中益氣,養肝明目」,適合虛弱、貧血、產後調養者。虱目魚肚富含油脂,能潤膚生津;魚骨熬湯則可補鈣健骨。

應用:可煮湯、煎、燉、烤、滷等。台灣名菜如虱目魚肚粥、虱目魚丸湯、虱目魚皮湯皆為常見料理。魚刺細密但肉質嫩滑、風味清香,是營養滋補與日常食補兼具的魚類代表。
