蒜苗(學名 Allium sativum L. var. sativum),別稱青蒜、蒜青、蒜葉、蒜花,為百合科(Liliaceae)多年生草本植物大蒜的嫩莖葉。原產中亞地區,後傳入中國與地中海沿岸,現於臺灣各地普遍栽培。依品種與用途可分為青蒜、花蒜、蒜薹等類型,葉綠莖白、質脆味香。

性味歸經:性溫,味辛,入脾、胃、肺經。

功效方面,蒜苗具有溫中健胃、行氣消滯、殺蟲解毒、祛寒化濕之效。《本草綱目》記載其「殺諸蟲、去惡氣、通五臟」,常用於脘腹脹滿、食滯不化及腸胃寒濕等症。其辛香能促進血液循環、增進食慾,並有抑菌防腐之功。

應用上,蒜苗為常見蔬菜與香辛料,可清炒、爆香、煮湯或入餡,搭配肉類尤能去腥提味。常見料理如蒜苗炒肉絲、蒜苗臘肉、蒜苗豆干等。亦可與薑、辣椒共用,提升菜餚香氣。其葉嫩莖皆可食用,適合春冬兩季採收。
