山藥(學名 Dioscorea opposita Thunb.),別稱淮山、薯蕷、薯蓣,為薯蕷科多年生藤本植物的塊莖,質地細膩、味甘滑。常見種類有淮山(乾品)、鐵棍山藥、日本山藥、毛山藥、紫山藥等,其中淮山最常入藥,日本山藥多作食用。

性味歸經:山藥性平,味甘,入脾、肺、腎經。中醫認為其有補脾養胃、生津益肺、補腎澀精之功,能強健消化、固守精氣。《本草綱目》云:「補而不峻,溫而不燥,補脾養胃,益氣延年。」

功效方面,山藥含有澱粉酶、多醣體、皂苷、維生素C與黏液蛋白,可健脾益氣、強筋健骨、潤肺止咳、延緩衰老,對脾胃虛弱或氣陰不足者尤為適宜。

應用上,山藥可蒸煮、燉湯、煮粥、涼拌或製粉,亦可與蓮子、紅棗、枸杞搭配煮粥或燉補。其質滑味淡、滋補而不膩,是藥食兩用的常見食材。
