🠴 龍鬚菜 🠶

龍鬚菜(學名 Sechium edule (Jacq.) Swartz),為葫蘆科佛手瓜屬植物的嫩蔓與嫩葉。別稱有龍鬚菜梗、龍鬚藤、佛手瓜苗、合掌瓜藤等。其莖蔓細長、葉嫩柔綠,略帶黏性,口感爽脆滑嫩。主要食用部位為嫩梢與嫩葉,台灣常見品種多為佛手瓜藤蔓類栽培。

性味歸經:性涼,味甘、淡,歸肺、脾經。

功效方面,龍鬚菜具有清熱解毒、利水消腫、潤肺止咳、養肝明目之效。《台灣食用植物誌》記載其「味甘性涼,能清熱化痰,益氣生津」。民間常用於暑熱煩渴、咳嗽痰多、水腫與食慾不振等症。

應用上,龍鬚菜常見於清炒、燙拌、入湯或涼拌料理中,與蒜蓉、蝦皮、豆豉等搭配最能提香。其質地細嫩、色澤翠綠,是夏季常見的清爽蔬菜。龍鬚菜亦富含維生素C、鉀與膳食纖維,能幫助排毒與調節體液,為兼具營養與食療功效的蔓生蔬菜。
