🠴 紅紫蘇 🠶

紅紫蘇(學名 Perilla frutescens var. crispa),別稱赤蘇、紫蘇葉、赤紫蘇、紅蘇,屬唇形科(Lamiaceae)一年生草本植物。其葉片呈紫紅色,具芳香氣味,表面略皺,有細絨毛。臺灣常見種類為綠蘇、赤蘇與皺葉紫蘇,紅紫蘇多用於調味與染色。

性味歸經:性溫,味辛,入肺、脾經。具解表散寒、行氣寬中、理氣安胎、解魚蟹毒之功。《本草綱目》載其「能行氣寬中,安胎止嘔」。

功效方面,紅紫蘇含有揮發油、紫蘇醛、花青素與多酚類化合物,能促進血液循環、舒緩風寒感冒、助消化並有抗菌作用。其葉與莖皆可藥食兩用,具芳香理氣與護胃功效。

應用上,紅紫蘇常用於醃梅、醃菜、製紫蘇梅、泡茶或入菜,亦作為染色與調味材料。於日本料理中常見於壽司、漬物與飲品中,色澤鮮艷、氣味濃郁。
