🠴 豌豆苗 🠶

豌豆苗(學名 Pisum sativum L.),別稱豆苗、寒豆苗、青豆苗、豌豆尖,為豆科(Fabaceae)一年生草本植物豌豆的嫩莖葉。原產地中海沿岸,現廣泛栽培於亞洲地區,臺灣於冬春兩季尤為盛產。依生長品種不同,可分為圓豌豆苗、皺豌豆苗與花豌豆苗等,嫩莖柔軟、葉片翠綠,略具豆香。

性味歸經:性涼,味甘,入脾、胃經。

功效方面,豌豆苗有清熱解毒、潤燥利水、健脾和胃、明目降火之效。《本草綱目拾遺》載其「清腸胃熱、除煩渴、益氣養中」,民間常用於清熱解暑、緩解目赤與咽喉腫痛。其性平而不燥,適合體虛熱盛者食用。

應用上,豌豆苗為常見蔬菜,可清炒、汆燙、涼拌或入湯,與蒜蓉、薑絲同炒尤能提香。亦可搭配豆腐、海鮮或雞肉食用,清甜爽口。嫩苗採摘期短,口感鮮嫩,是冬季餐桌上的時令蔬菜。
