黃豆(學名:Glycine max),又名大豆、菜豆、黃大豆,為豆科(Fabaceae)大豆屬(Glycine)一年生草本植物,原產於中國,現廣泛栽培於世界各地。依顏色與用途可分為黃皮大豆、黑豆、青仁豆等,其中黃豆為最常見食用種類。其種子飽滿富含植物性蛋白質與油脂,是重要的糧食與油料作物。

性味歸經:黃豆性平,味甘,入脾、大腸經。《本草綱目》載其有健脾益氣、潤燥消水、解毒和中之功。能補虛養血,潤燥止渴,並有助利尿通便、解酒毒。古人亦以其為「五穀之長」,視為滋養之品。

功效方面,黃豆具有補中益氣、養血生津、清熱解毒等作用,可助於體弱者恢復元氣,並調理脾胃功能。

應用上,黃豆用途極廣,可製成豆腐、豆漿、豆皮、豆干、醬油、味噌、納豆等多樣食品,亦可榨取大豆油作烹調用油或製成豆粉。其芽即為黃豆芽,亦為常見蔬食。
