🠴 紫米 🠶

紫米,學名 Oryza sativa L. var. glutinosa, 又稱黑糯米、紫糯米、紫黑米,為禾本科稻屬植物的糯性品種。依產地與用途可分為糯性紫米、長糯紫米、黑香米等,常見品種有台農紫米1號、泰國黑糯米、雲南紫米。其外層糠皮含豐富花青素,米粒呈深紫至黑色。

紫米性平,味甘,歸脾、腎經。具有補血養氣、健脾暖胃、滋陰補腎、強筋骨之功效。中醫認為紫米能補中益氣、調和五臟、養顏潤膚,適用於氣血不足、體虛勞倦、脾胃虛弱等症。

應用方面,紫米可煮飯、煮粥、蒸糕、釀酒,亦常與紅豆、薏仁、蓮子搭配製成紫米粥、紫米飯、甜湯等養生食品。其色澤美觀、香氣濃郁,是中式與東南亞料理中常見的健康穀物。紫米富含花青素、鐵、鋅、維生素E與膳食纖維,在藥膳與養生飲食中多用以補血潤膚、養肝護腎。
