黑木耳(學名 Auricularia auricula-judae (Bull.) J. Schröt.),屬於木耳科木耳屬真菌。別稱有雲耳、木茸、樹雞、木蛾等。生長於闊葉樹的枯木上,子實體呈黑褐色半透明狀,質地柔韌富彈性。依栽培與色澤不同,常見種類有黑木耳、厚木耳、薄木耳與雲耳(灰褐色品種)等。

性味歸經:性平,味甘,歸胃、大腸、肝經。

功效方面,黑木耳具有潤肺益氣、涼血止血、滋陰養胃、活血化瘀之效。《本草綱目》載:「木耳益氣,不饑,輕身強志。」傳統上用於血熱出血、痔瘡出血、血瘀閉經等症。其膠質能吸附腸道中殘留物,有助於排毒與降脂。

應用上,黑木耳為台灣與華人飲食中常見食材,可炒、涼拌、入湯、滷製或搭配肉類、蔬菜共煮。乾品需泡發後食用,口感滑脆。亦可製成果乾或健康食品,用於養生粥品、素食料理及清爽涼菜中,是兼具食療與營養價值的真菌食材。
