🠴 杏鮑菇 🠶

杏鮑菇(學名 Pleurotus eryngii),別稱帝王菇、刺芹側耳、鮑魚菇,屬擔子菌門側耳屬,是一種大型食用菇類,菌柄肥厚、菌傘圓潤,質地脆嫩而富彈性,味似鮑魚而得名。常見種類有白杏鮑菇、黑杏鮑菇、迷你杏鮑菇等,依品種與培養基質略有香氣差異。

性味歸經:杏鮑菇性平,味甘淡,入脾、胃經。中醫認為其有益氣開胃、潤腸通便、清熱平肝之效,能補中益氣、調理腸胃功能,適合脾胃虛弱或飲食不調者食用。

功效方面,杏鮑菇富含植物蛋白、膳食纖維、維生素B群、多醣體與礦物質,能降血脂、強免疫、促進腸道蠕動、抗氧化。菇體中的多醣具有助於提升身體抵抗力的作用。

應用上,杏鮑菇可煎、烤、炒、滷、燉湯,亦能切片仿海鮮口感。常見料理如三杯杏鮑菇、黑胡椒炒菇、烤杏鮑菇串等,是素食與葷食料理中兼具營養與風味的高纖低脂食材。
