🠴 玳瑁石斑 🠶

學名:Epinephelus fuscoguttatus
別稱:花尾鱠、花石斑、豹紋石斑、龍虎斑母魚,屬於鱸形目鮨科石斑屬(Epinephelus)。此魚體型粗壯、頭大口寬,全身佈滿深褐色圓斑,似玳瑁紋路而得名。原生於印度洋至西太平洋熱帶海域,在台灣南部與東部海域、澎湖及離島皆可見蹤跡,常棲息於珊瑚礁、岩礁或潟湖中,是重要的養殖與高經濟價值魚種。

常見種類:除原種玳瑁石斑 (E. fuscoguttatus) 外,與鞍帶石斑 (E. lanceolatus) 雜交者為常見的人工養殖品種「龍虎斑」,生長快、體色華麗。

性味歸經:性平,味甘、微鹹,歸脾、胃、腎經。

功效:具補氣養血、強筋壯骨、益腎健脾、潤膚養顏之效。古人以石斑魚為「海中補品」,有助於虛勞體弱、病後恢復與增強抵抗力。

應用:玳瑁石斑肉質細緻潔白、脂肪分布均勻,適合清蒸、煮湯、火鍋或炭烤;魚皮富膠質,可入菜或燉湯;其高營養與滋補特性,使其常見於節慶宴席與養生料理中。
