蒜頭(學名 Allium sativum L.),別稱大蒜、蒜、蒜球、蒜瓣,為百合科(Liliaceae)多年生草本植物的鱗莖。原產中亞與地中海地區,後傳至中國,現為世界各地常見的香辛蔬菜。依外觀與風味可分為白皮蒜、紫皮蒜、獨頭蒜與紅蒜等品種,瓣多味辛香濃烈。

性味歸經:性溫,味辛,入脾、胃、肺經。

功效方面,蒜頭具有溫中健胃、行氣消滯、殺蟲解毒、祛寒止瀉之效。《本草綱目》載其「殺諸蟲、去惡氣、解毒化積」,常用於腸胃寒濕、食滯脹滿、霍亂吐瀉及寄生蟲病。其辛溫之性可行氣活血、促進消化、助陽散寒,並具天然抗菌、防腐功效。

應用上,蒜頭是調味與藥用兼具的重要食材。生食可增食慾、殺菌解毒;熟食常用於炒菜、滷味、燉湯、醃漬。如蒜香雞、蒜蓉蝦、涼拌蒜泥白肉等皆為經典料理。另可製成蒜油、黑蒜等加工品,用於增香或食補養生。
