青紫蘇(學名 Perilla frutescens var. frutescens),為唇形科(Lamiaceae)一年生草本植物。別稱有白蘇、綠蘇、青蘇、蘇葉等,為紫蘇的綠葉品種,與紅紫蘇同屬但色澤與用途略異。青紫蘇葉色翠綠、香氣濃烈,具特殊揮發油成分,茎葉柔軟,常作為食用香草與藥用植物。常見種類包括皺葉青蘇與光葉青蘇兩類。

性味歸經:性溫,味辛,歸肺、脾經。

功效方面,有解表散寒、行氣和中、止嘔安胎、解魚蟹毒之效。《本草綱目》載:「紫蘇能寬中下氣,安胎解毒。」青蘇氣味芳香,尤能疏散風寒、理氣寬胸,適用於感冒初起或胸悶脹滿之人。

應用上,青紫蘇常用於日本、韓國及台灣料理中,作為生魚片襯葉、涼拌菜、湯料或漬物調味。其葉可涼拌、煮湯、炒蛋或包卷料理,亦可曬乾後泡茶飲用,以助消化與解腥去膩。種子可榨油或作調味料,是兼具食療與藥用價值的香草植物。
