🠴 豌豆莢 🠶

豌豆莢(學名 Pisum sativum var. macrocarpon),為豆科(Fabaceae)豌豆屬植物,是普通豌豆的變種之一。別稱甜豆、荷蘭豆、食莢豌豆、扁莢豆。原產於地中海沿岸,現廣泛栽培於亞洲、歐洲與美洲溫帶地區,臺灣冬春季為主要生產期。其特徵為莢片扁平柔嫩、種子未成熟即採收食用,風味清甜。

常見種類依莢形可分為平莢型、稍彎型與厚莢型,栽培品種如「雪裡青」、「青莢荷蘭豆」等,皆以嫩莢入菜。

性味歸經:性平,味甘,入脾、胃經。

功效方面,荷蘭豆具有健脾養胃、潤腸利水、清熱解毒、補中益氣之效。富含維生素C、膳食纖維及植物蛋白,有助於促進腸胃蠕動、維持免疫力與皮膚健康。《本草綱目拾遺》亦載其能「養中清熱,潤澤肌膚」。

應用上,嫩莢質地柔滑、清脆甘甜,常用於清炒、涼拌、煮湯或搭配海鮮與肉類料理,如荷蘭豆炒蝦仁、荷蘭豆牛肉片等,是餐桌上常見的高纖健康蔬菜。
