🠴 紫地瓜 🠶

紫地瓜(學名 Ipomoea batatas (L.) Lam.),別稱紫薯、紫甘藷、紫心番薯,屬旋花科(Convolvulaceae)番薯屬多年生藤本植物。其塊根外皮多為紫紅色,內肉呈深紫或紫黑色,味甘香濃。臺灣常見種類有台農73號、台農66號與紫心地瓜,多於秋冬季收成。

性味歸經:性平,味甘,入脾、腎經。具補中益氣、健脾養胃、潤腸通便、養血安神之功。《本草綱目拾遺》載其「補虛益氣,和中開胃」。

功效方面,紫地瓜富含花青素、膳食纖維、維生素C與鉀,能抗氧化、促進血液循環、增強免疫力並維護腸道健康。花青素更具護眼、抗老化及保護心血管功能。

應用上,紫地瓜可蒸、烤、煮、製餅或打成泥,適用於甜品與麵包烘焙,也可製成粉末或乾片作為天然色素與健康食品原料。
