學名:Sus scrofa domestica(豬肋排)別稱:排骨、豬肋骨、肋排、豬骨,為家豬身上帶有部分肋骨及周圍瘦肉的部位,是肉類中常見的食材之一。其質地結實、香氣濃郁,含豐富的蛋白質、膠原蛋白與礦物質。

常見種類:依部位可分為大排(靠近脊骨,肉多骨少)、小排(肋骨中段,肉質細嫩)、子排(靠近胸骨,脂肪較多)等。市售亦有帶皮排骨、去皮排骨、冷藏排骨與冷凍排骨等形式。

性味歸經:性平,味甘鹹,歸脾、胃、腎經。

功效:有補中益氣、滋陰潤燥、強筋健骨、養血補虛之效。古籍《本草綱目》載其能「補虛乏,潤肌膚」。適用於體虛消瘦、血虛面黃、筋骨無力等狀。

應用:為家常湯品與滷製料理的重要食材,如排骨湯、糖醋排骨、藥膳排骨、清燉排骨等。與蓮藕、苦瓜、冬瓜等同煮,可清熱生津、調和脾胃;與藥材共燉,則可強身補氣、助康復。
