🠴 冬瓜 🠶

學名:Benincasa hispida (Thunb.) Cogn.(冬瓜)別稱:白瓜、枕瓜、東瓜、白冬瓜。為葫蘆科植物,成熟果實外皮呈灰白或帶蠟粉,果肉潔白多汁,是夏季常見的清熱蔬菜。

常見種類:依形態可分為長形冬瓜與圓形冬瓜兩類,長形者產量高、肉質厚,適合湯煮;圓形者外觀圓潤、肉質細嫩。另有小冬瓜(又稱嫩冬瓜)供家庭短期烹調使用。

性味歸經:性涼,味甘淡,歸肺、脾、小腸經。

功效:有清熱生津、利水消腫、化痰除煩、解暑止渴之效。《本草綱目》記載冬瓜能「令人悅澤好顏色,久服輕身耐老」,常用於暑熱煩渴、小便不利、水腫腹脹等症。其籽入藥稱「冬瓜仁」,具潤肺化痰、排膿之功。

應用:常作湯品、燉菜、滷菜材料,如冬瓜排骨湯、冬瓜蛤蜊湯、紅燒冬瓜等。亦可製成冬瓜糖、冬瓜茶、冬瓜露作清涼飲品。其味清淡、吸味力強,能與肉類、海鮮或藥膳調料相輔相成。
