豬里肌肉(學名源自Sus scrofa domesticus製品),又稱豬腰內肉、豬嫩肩肉、豬腰脊,位於豬背脊中央兩側,質地細嫩、脂肪少、纖維細緻,是豬肉中最嫩且高蛋白的部位之一。常用於煎、炒、烤、炸、火鍋或蒸等料理,口感鮮嫩多汁、營養豐富。

中醫認為,豬里肌肉性平,味甘、鹹,歸脾、胃、腎經。具有補氣養血、滋陰潤燥、健脾養胃、強筋益氣之功效。主治氣血不足、體虛勞倦、產後虛弱、陰虛咳嗽、消瘦乏力等症。其性質平和、補而不燥,尤適合氣血兩虛或體力消耗者食用,有助恢復元氣與增強體力。

現代營養學指出,豬里肌肉富含優質蛋白質、胺基酸、鐵、鋅、維生素B1、B6、菸鹼酸與磷,能促進肌肉修復、增強免疫力、維持神經與代謝健康。其脂肪含量低於五花肉,為理想的高蛋白、低脂肪肉品選擇。
