🠴 豬肝 🠶

學名:Sus scrofa domestica(豬肝)別稱:豬肝臟、豬子肝、肝花。為豬的內臟之一,是食用動物肝類中最常見者,質地細滑、味道濃郁,為高營養價值的動物性食材。

常見種類:依新鮮度與處理方式分為新鮮豬肝與冷凍豬肝;依用途又有炒用肝片、燙用肝花、燉湯肝塊等。部分地方還以豬肝製作肝腸、肝醬、肝蓉粥等加工食品。

性味歸經:性溫,味甘苦,歸肝、心經。

功效:具補肝明目、養血補虛、益氣健脾之效。《本草綱目》記載:「豬肝補血明目,治婦人血虛。」豬肝富含鐵質、維生素A、B群及蛋白質,能養血益氣,改善眼花頭暈、面色萎黃、視力減退等症。

應用:常見於炒、燙、湯、滷等料理,如薑絲炒豬肝、豬肝湯、豬肝粥等,並常入藥膳與產後補血食譜。烹調時宜快速加熱以保持嫩滑口感。豬肝亦為氣血雙補與護眼明目的傳統食材,在中醫食療中佔有重要地位。
