學名:Gallus gallus domesticus(雞蛋)別稱:雞卵、鷄子、雞卵白、雞卵黃。為母雞所產之蛋,是全球最普遍的高蛋白食材之一,營養豐富且用途廣泛。

常見種類:依飼養方式與外觀可分為紅殼蛋、白殼蛋、土雞蛋、放山蛋、有機蛋等;另有鹹蛋、皮蛋、茶葉蛋等加工形式。

性味歸經:性平,味甘,歸心、脾、肺經。

功效:具滋陰養血、安胎補心、潤燥養顏、強筋健體之效。《本草綱目》記載:「雞子,補益氣血,潤燥養心。」蛋黃含豐富的卵磷脂、維生素A、D、E與鐵質,能補血養眼;蛋白則富含優質蛋白與氨基酸,有助於肌肉修復與免疫力提升。

應用:雞蛋為日常飲食與藥膳常用食材,可煮、蒸、煎、炒、烘焙等多樣烹調,如荷包蛋、蒸蛋、蛋花湯、茶碗蒸等。中醫食療中常以蛋黃補血安神、蛋白清熱解毒,並搭配藥材入膳,如當歸蛋、枸杞蒸蛋等,為滋補與養生之佳品。
