🠴 Beef tripe 🠶

學名:Bos taurus domesticus 別稱:牛百葉、牛胃、牛肚片。為牛的胃部加工後的統稱,依部位可分為蜂巢肚、金錢肚、草肚、柏葉肚等。其質地彈韌,口感獨特,是多國飲食文化中常見的食材。

常見種類:以部位命名,蜂巢肚(第二胃)最為常用,適合滷製;金錢肚(第三胃)筋脈分明,適合紅燒;柏葉肚(第一胃)肉質厚實,多用於湯品或火鍋中。

性味歸經:性平,味甘,歸脾、胃經。

功效:有補虛養胃、益氣健脾、強筋壯骨之效。《本草綱目》記載:「牛肚補虛,益氣力,止渴止煩。」中醫認為牛肚能補中益氣,增強消化機能,對於體倦、食少及術後虛弱者尤佳。

應用:牛肚常見於滷味、火鍋、牛雜湯、紅燒料理中;亦可涼拌、清燙或與蔬菜同炒。其富含膠質與蛋白質,營養豐富。臺灣常見之「滷牛肚」為庶民經典美食,而港式「牛雜煲」與義大利「牛肚番茄湯」亦以其獨特風味著稱。
