🠴 dumpling 🠶

麵疙瘩(學名:Gnocchi),又稱麵糰仔、麵珠、義式疙瘩、土豆麵糰,源自義大利北部家庭傳統料理。名稱來自義大利語 nocchio,意為「小結」或「小團」,形狀圓潤不規則。主要以馬鈴薯、麵粉、蛋與鹽混合製成,亦有以南瓜、菠菜、蕎麥或乳酪為基底的變化。常見種類包括馬鈴薯麵疙瘩(Gnocchi di Patate)、南瓜疙瘩(Gnocchi di Zucca)、**里可塔乳酪疙瘩(Gnocchi di Ricotta)及菠菜疙瘩(Gnocchi di Spinaci)**等。

性味歸經:味甘、性平,入脾、胃經,五色屬「黃」,五行屬土。具益氣補中、健脾養胃、潤燥生津、安神解疲之功。含複合碳水化合物、鉀、鈣及少量蛋白質,可補充能量、穩定血糖並緩解疲勞。

應用方面,麵疙瘩可煮、炒、焗或入湯,搭配奶油白醬、蕃茄紅醬、青醬或起司焗烤皆宜。義式料理中常與帕瑪森起司、香草、培根或蘑菇搭配,形成綿軟滑嫩、外層微脆的多層口感。亞洲地區亦有以麵粉加水製成的中式麵疙瘩湯,湯鮮味厚,適合補氣暖胃、四季皆宜。
