🠴 豬肚 🠶

學名:Sus scrofa domesticus 別稱:豬胃、白肚、肚頭。為豬之胃部經清洗與處理後所得,質地厚實有彈性,味道濃郁。常見於中式藥膳與湯品之中,為滋補與家庭料理的重要食材。

常見種類:依部位與用途可分為整豬肚、豬肚片、熟豬肚等;亦有以烹飪方式區分,如胡椒豬肚、滷豬肚、炒豬肚花等。新鮮與熟製品皆常見於市場。

性味歸經:性微溫,味甘,歸脾、胃經。

功效:具補虛健脾、和胃養中、強健氣血之效。《本草綱目》載:「豬肚補中益氣,健脾胃,治虛羸。」中醫認為豬肚能補脾胃虛寒、助消化、止瀉瀉痢,適用於飲食不振與體弱者。

應用:常見於胡椒豬肚湯、豬肚雞、八珍湯等藥膳中,亦可切片炒食或滷製。烹飪前需充分清洗、翻面去腥。粵菜中以胡椒豬肚雞最為著名,具有暖胃祛寒之效,為冬季進補佳品。
