🠴 紅辣椒 🠶

學名:Capsicum annuum L. 別稱:又稱番椒、朝天椒、紅椒、紅辣子等,為茄科辣椒屬植物成熟後轉紅的果實。原產於中南美洲,後傳入亞洲,成為東亞與南洋料理中常見的辛香食材。

常見種類:包括朝天椒、二荊條、牛角椒、紅線椒、糯米椒等。依品種與熟成度辣度不同,朝天椒尤辣,糯米椒則辣味溫和。紅辣椒多用乾製或製成粉、醬類調味。

性味歸經:性熱,味辛;歸脾、胃經。

功效:具溫中散寒、開胃消食、活血通絡、祛風除濕之效。所含辣椒素能促進循環、增強代謝、刺激胃液分泌以助消化,亦有抗菌、抗氧化功能。適量食用可提振精神與食慾,但過食易傷胃、引起口舌生熱。

應用:紅辣椒常用於炒菜、滷製、燒烤、辣醬、泡菜與乾辣椒粉製作中。川菜、湘菜、韓式與東南亞料理中尤為常見,用以增色添香、激發風味,成為餐桌上不可缺的熱辣元素。
