學名:Solanum lycopersicum L.(原料番茄)別稱:又稱蕃茄醬、西紅柿醬、茄汁,為以成熟番茄為主原料,經濃縮、調味後製成的調味醬。酸甜可口,為世界各地常用之基礎調味品之一。

常見種類:依製程與用途不同,有原味番茄醬、甜味番茄醬、義大利番茄糊、辣味番茄醬、低糖番茄醬等。原味多用於烹調,甜味型常搭配炸物或速食;義大利番茄糊則濃稠、酸味重,適合燉煮醬料。

性味歸經:性微寒,味甘酸;歸肝、胃經。

功效:有生津止渴、健胃消食、清熱解毒、潤膚養顏之效。可助消化、調中和胃氣,並有助生津解暑。中醫認為番茄酸甘入胃,能理氣止渴、涼血平肝。

應用:廣泛用於炒飯、義大利麵、燉菜、炸物蘸醬等料理,如糖醋排骨、茄汁魚、番茄牛肉湯等。亦是漢堡、薯條、熱狗等西式餐點常見搭配,能提升食材風味與色澤。
