🠴 花椒油 🠶

學名:Zanthoxylum bungeanum Maxim.(原料花椒)別稱:又稱椒麻油、花椒香油、麻香油,以花椒乾果為主要原料,經浸泡或蒸餾於植物油中製成,具有獨特的麻香與辛香氣息,是川菜與中式料理的重要調味油。

常見種類:依花椒品種與製法可分為紅花椒油、青花椒油、混合花椒油、冷榨型花椒油等。紅花椒油香氣濃郁、麻勁厚重;青花椒油氣味清爽帶柑橘香;冷榨型則保留更多天然精油成分。

性味歸經:性溫,味辛;歸脾、胃經。

功效:有溫中散寒、行氣止痛、除濕殺蟲、醒脾開胃之效。能促進血行、溫暖臟腑、驅寒助消化;中醫認為花椒辛散而溫,可助陽氣、調中焦寒濕。

應用:常用於拌菜、涼皮、麻辣鍋、口水雞、滷味、川味炒菜中。亦可作為辣椒油、香料醬、麻醬拌料的基底,增添菜餚層次。烹調時多於出鍋前淋上,保留香氣並提升麻香風味。
